Our honey comes to us in 55 gallon drums and we warm each drum individually and then pour our honey one drum at a time. We NEVER blend our honey to achieve a particular flavor or color. From warming to pouring the process takes 10-12 days. We never rush the process. The reason we never blend our honey is because we believe honey is much like wine, it is a product of its environment and each environment is unique unto itself.
