We uncap the honey comb the OLD FASHIONED WAY with a fine comb and NOT A HEATED KNIFE that actually boils honey it comes in contact with during the uncapping process. We never heat our honey above 100-105 degrees F. (The Same temperature in the hive on a hot day!) We have to raise the temperature of the honey to about 100-105 degrees F so it flows better into the final containers and the dead bees, large pieces of pollen, ect float to the top and are removed. We do NOT strain our honey either. The Big Boys heat their honey to about 120 degrees F so they can run it through a strainer and smaller mesh screens. These higher temperatures not only permit the honey to flow through their finer strainers but also KILLS OFF a lot of enzymes, bacteria, ect (The good stuff.) We sell only RAW LOCAL HONEY produced right here on the farm from locust trees, flowers, a little buckwheat we plant as a cover crop at times, clover, ect. We never treat our bees chemically for mites or any other infestations.

Because, any honey you see in a jar has been extracted, therefore by definition, it has been processed in some way. We take great care to carefully extract, coarsely strain, then bottle our raw liquid honey without changing anything about it, leaving all the goodness the bees put into it for you to enjoy. We will start harvesting our honey for you to enjoy in August(UPDATED: May 08, 2015, JBS)

"Just got back from picking raspberries at Breezy Farms, what a great time we had!
