Not heated or pasteurized. Ray local honey crystalizes with temperature fluctuations, unlike mass-produced honey in the grocery store, which does not crystalize. To melt the crystals, boil water and turn off heat. Place jar into the hot water. Cover. Remove and shake after 15 minutes. Repeat until the crystals are dissolved. Heating over 110 degrees or microwaving raw honey kills the beneficial enzymes. (ADDED: June 14, 2020)
